Hands off, Handmaiden:
Bao Dur can't wear robes, Mira and Atton are sentinels - not the best jedi choice out there (unless you play sentinel as main char). Disciple -LOL. He has almost no wis and cha and becomes Consular? Stasis, everyone saves, stasis again, everyone saves... don't be ridiculous =).
So, now the real deal, we get an a$$kicking woman (undoubtedly wearing dancer outfit), who has got nice soldier stat-s. And an extra guardian in the party never hurts... well, never hurts you, that is. Of course, this is best accomplished by not leveling her up until the conversion.
Second choice - Atton, his special ability is more useful for Jedi than Mira's.

I think the sentinels are really only useful if you're NOT one yourself. Sentinels are only good for getting skill points, and if you're one yourself, you already have the necessary skill points. So, yes, I agree that Handmaiden is the best, hands off.

Once she becomes a Jedi, yes, of course. Though she might be better off with her bare hands.

I kept Handmaiden at lvl 6 soldier until I hit 18 and finally got Granny to tell me about Handmaiden's mother. Then I trained one last time with HM and immediately asked her about her mother, I convinced her to become a Jedi Guardian at that point, took her outside and instantly leveled her up to 14, (or 15?), and handed her two lightsabers after training her in duel weapon 3. She is also very good with a double-Lightsaber. Next to my main, a Jedi Guardian Weapons Master, she is the most powerful character in the game and could probably tear up a Boss singlehanded.

Handmaiden is the best by such a large margin its sick...you should never EVER give her any weapon....by the time you get Echani Strike3 and Unarmed Specalist maybe 5-6 she can out damage all but the best double-bladed lightsabers...simply train in Blaster Deflection (the one for non using lightsabers) get amster flurry and enjoy 1 shotting sith lords...my favorite handmaiden moment was on my return to Dxun when i had to infiltrate Freedon Nadd's tomb...i took Visas for some healing and statis fields (i had got her up to full lightside) and handmaiden just basically started wadein through enemiees killing them in 1 flurry each...soooo fun
