There is so much going on in this game! I feel my brain swelling.
My trouble is that I'm already gaining quest upon quest -- many without seeking. My main quest at the moment is gaining the money for Gaelen.
On top of that, I've got Mae'Var and Trademeet and going to the cemetary, among others.
My question, then, is, am I able to wander about to my heart's content or do I need to get these, and others, done immediately?

For quests like Trademeet and Mae'Var you can wander, but for quests relating to NPCs joining... these all have time limits. The first time I played through I had a little trouble and got overextended, but if you are worried about it, just cut the npc loose, do a few quests, then come back and get them.

Right, except for NPC specific quests, you can do most of the quests at leisure despite the seeming urgency of the people who give you the quests. So, don't fret, take your time and have fun. You can also save some of the quests for later in the game if you want (i.e. after you've advanced the main plot).

I couldn't tell if Faust and Cuchulain hinted at these exactly, so just in case...
It's best to tell NPCs that you'll get to a quest when you have a chance (particularly for Stronghold quests), which is usually the 2nd dialogue option when you're on the last dialogue line before the quest is initiated. This way, they won't hound you about them (at least to my memory) and you can start them whenever you want. Unfortunately, some quests are really emergency ones, so you'll find out which are such when you initiate them.
Fortunately, collecting the money for Galen is very long-term, so he'll accept the cash whenever you want. Besides, all he cares is to get it so he can help you, not when he does.
If you want to know what advantage you'll have for completing Galen Bayle's quest sooner, the enemies within chapters 3 - 5 will be a bit (if not significantly) easier. You'll also likely have less to carry on with you throughout the entire 3 chapters. However, you'll likely miss out on some spells and items, so whether harder enemies and more powerful weapons or weaker for both is your preference, it's up to you.
