Multiplayer and Dual Class issue

Two questions:
1 - Is there any point in playing the game in single player mode aside from dealing with annoying dialog from Imoen and the like? I know about the romances and couldn't care less. I just want to know if I am missing something by creating my game in the multiplayer, building my party and then copying the save directory over to the single save directory...
2 - I have and issue with my dual class Kensai -> Mage attempt. I wanted him to have the hit point from the Kensai and then learn to be a mage, but I can't dual class him. I have tried a number of things but nothing seems to work. The stats should be good for both, but the dual class button is grey'd out. Anyone have any suggestions?
