Whats the deal with fire and cold? Shouldn't there be Enemys where , lets say, they're made of grass? Or super succeptible to cold????

Some enemies wear resistant armor or use Energy Resistance. If that's happening, weapons with those bonuses will be less effective so you need to calculate that when upgrading your weapons. Besides that, there's not much to it.
