I went to Grymlok in order to find more about runes (and thought i could get more rune stones from him) but when i arived it seems that he's lost his memory ( ) ... So what do i do?

There is a chain of people you need to talk to.

Lord Graemare in Bolen Fields, then
Gileah in the Fargrove tavern, then
Staroxia in the Forbidden Lands, and finally
Grymlok.
