Well you pretty much see the pros and the cons in the kit and class description.
The Monk is like a fighter except that they fight best with their bare hands. They have great speed and high magic resistance towards the end of the game. They also have stealth and find traps. Stealth is very handy indeed and so is the high magic resistance. Their ac also lowers every second level so that it is quite low towards the end. Their only problem is that they lack the hp's of a normal fighter and can be vulnerable to heavy melee.
The swashbuckler is a very fun class to play. In the beginning their thac0 will be a problem but as they level up and het better equipment they hit hard only not so often. Ofcourse they have supreme thieving skills but no backstab.
All the paladin kits are better than the pure paladin imo. Inquisitor is really handy, especially if you don't have a magic heavy party and do a lot of buffing. Cavalier is immune to the most annoying effect in the game, fear. Which is very handy.
Undead hunter, well the name says it all.
The inquisitor has the biggest drawback in that they can't turn undead or cast spells but then they also have the biggest benefit in their dispel magic and true sight.
To really learn their respective pros and cons why don't you play them.
