my companion has lost his humanity and now I can't play - is there a way to replenish humanity or do I have to start all over ?

Next time make sure your companion's stance is NOT agressive, otherwise they'll go and attack everyone on sight. Better to have their stance at defensive or neutral, then they'll only do what you do.
