you cannot get the monk option until you have 1 eastern house tier 2 class. so to get monk as an option from the adept line, you have to become the eastern house tier 2 of your 2nd tier 1 class first. For example, if you were playing an adept/mage, then before you could get the option to be a monk from the temple you would have to become a Shugenja at the eastern house. Once you became Shugenja then you should have the option to become a monk, paladin, or celestial at the temple.

You will have to join the Eastern Houses to do that. Go to the House of the Dragon in Fargrove. There you agree to learn their ways. You will be quested to get a dragon egg and return it to the House of the Tiger in Arindale. Once you have done that, you will then be able to get the monk by talking to either of those Houses. They will then off you the appropriate 2nd tier class based off the guilds you have joined.
Celestial: Monk
Fighter: Saumari or Imperial
Mage: Shugenja
Rogue: Budoka
Also, you are only allowed ONE eastern class, so choose which one you want definitely.
