How do you enable OpenGL accelleration for Icewind Dale II?

Don't know anymore if IWD2 supports OpenGL at all, but if it does you can enable it using the configuration program. It should be in the graphics tab, where you can enable screen resolutions higher than 800 x 600 as well.
