if you use the machine of Lum the mad in Watchers Keep - you can boost a number of scores by 1 - so if you are selfish, you can boost only your own and then sacrifice 1 - alternatively, if you like snazzy belts - you could sacrifice strength and use the girdles of strength to still be over-18 strong. items which set an attribute mean that you can afford to be deficient in that one and just use the item - the ring of human influence giving CHA 18 plus the nymph cloak and the Blade of Roses and the Helm of Glory can give you CHA in the 20s, even though you start at say 8/9.
the Mauler's Arm gives STR18
the girdles of hill giant strength, frost giant strength and ? fire giant strength ? all STR19+
ring of human influence sets CHA base to 18
girdle of fortitude? gives CON18
can't recall the rest.

If your main char is a mage, I've heard you can use the right spell immunity to block the effect.

doubt it - spell immunity is temporary and counteracts spells - the dream is not in 'real time' and the beast demands that you agree, not casts a spell.
level drain etc are all temporary effects and restoration or remove curse can fix any deductions - the reduction of a base score is not reversible like that.
unless the scroll Protection from Magic could be employed somehow, I can't see how it could be possible to avoid a scripted loss rather than an in-game spell. it takes the point from the base, not from any temporarily increased score and the base does not show red as affected by something.

Spoiler:
The hell test where you can either sacrifice a party member or take some attribute drain can be avoided with a spell immunity divination if I recall correctly. Though I don't know if you can have any protections in a dream. Might want to try the 8 hour spell trap from the staff of the Magi or something.

Spoiler from Dan Simpson's guide (don't know if it works though)
The demon has to take it away from you; you don't simply lose it.
Therefore if the demon never has time to take away your stat you'll
never lose it. Fight Bhaal outside and weaken him to near death
status. Lure him over to the door and talk to the demon just as he's
about to catch up. Choose any stat to sacrifice (it doesn't matter
which). Quickly do a fake-talk as soon as the conversation ends and
use the time to run inside. If you're quick enough you won't lose the
stat. Now when you talk to Imoen the dream will come to an abrupt end
and you'll be transported out of the area without losing anything

fake-talk?
What do you mean by fake talk? Is that where you command your pc to intiate dialog then walk off before the dialog begins? does this have an effect that I didn't know about?

Yeah, fake talk does all kinds of weird and cheesy things. It's possible to kill many monsters that start out friendly with fake talking. Almost all the dragons are suspectable and it's possible to do it without taking a hit.
The fake talking the demon does work, but just be aware if you should walk back outside the keep again for even a second your statistics would be deducted naturally.

I did it and it worked, but after I got back and talked to john and bohdi in the dungeon my stat went down
