What would be the Stats (ie Str/Dex/Con/Int/Wis/Cha) for:

Race Class
Kobold Fighter (Plain)?
Gnoll Shaman Fighter/Druid~cleric ?
Gnoll Fighter~Ranger ?
Ogre-mage Fighter/Mage ?
Ogre Fighter/Barbarian ?
Orc Fighter ?
Goblin Fighter ?

And what would be the optimal level-up capacity - one level every 4 etc?

As you could probably tell I'm thinking to make up a creature party (like the one at Umah Hills :D )

Use shadowkeeper. Has an excellent creature editing tool. You can also browse creatures' stats (including their levels, alignments and equipments) you're looking for.
Go [url="http://www.mud-master.com"]www.mud-master.com[/url] to download shadowkeeper. Shadowkeeper also lets you change sprites of your npcs. Hope this helps :)

Yes, Shadowkeeper is what I'm going to use.

The question related to stats, as in a Kobold would not have 18/00 strength, so what would be the strength etc of an average Kobold/Ogre/Gnoll/etc?? and what class would they best suit.

Anyone?

If my memory serves well, kobolds have strength of 9 or 10 or something really low (you can browse their stats using shadowkeeper and copy the stats off to your npcs). Of course they will all be fighters or clerics (that's what I've seen in the game so far with an exception of Ogre mage). Their levels were about 4. Ogres all tend to have 18/00 strength and 10 or something similar dexterity (not sure about their level).

You can browse creature's stats using shadowkeeper (creature editor) and it will show you all the stats for the races you're looking for, like their ability scores, levels, classes, equipments, and sprites. Fortunately, the ability scores and levels for each race are almost constant (eg. ogres all have 18/00 strength), although "elite" classes seem to have better stats and levels.

It's up to you to decide which level you want to play (eg. average or "elite" Gnolls). Beware that some sprites for certain races have restricted sprites. For example, Gnolls usually wield halberds so if you equip them with weapons other than halberds game might crash (I haven't tried it myself), but hey you can use this to assign certain weapons to certain races (eg. kobolds weilding short sword and bows, gnolls using ravager +6, ogre with two-handed swords and orc with firetooth and bastard swords) Hope this helps.
