I can't get rid of them! Can anybody tell me the best way to kill one of these?

Turn undead and hope for a lucky roll which allows to hold undead even 4 levels higher than your cleric.
When my cleric's level was too low I just marked the shadow on the map and returned when she was more experienced.
It's also possible to use one of the powerful wands you can find if you don't mind spending charges for this nuisance.

Thanks. I'll try that. Who exactly can use the wands?

Just try it out. I never needed to use one.

Clerics and mages, as far as I know.

the best and easiest way is turning - however at the start of the game the cleric in a party will be too low level to successfully turn a shadow (or spectre, wraith etc.) and can be happy if he turns some skeletons or zombies (the normal ones, not those pesky skeleton knights or skeleton lords...).
Besides turning you can fight shadows with brute force if you know to use the right tools:
1) Normal non-magical weapons are entirely useless. You need weapons of at least +1, e.g. Battle Axe +1 to be able to hurt them at all.
2) As incorporeal undead every physical attack has a 50% chance to miss - so even with a +1 weapon your fighter/paladin or whatever will miss VERY often before a shadow is defeated.
A great weapon to have is a two-handed hammer that can be found in the Main Halls - it has a +5 enchantment when used against undead...
