In regards to races, I generally play a Breton. I like the Magicka bonus (50pts) plus the 50% resistance to Magicka. I feel that, if I play someone using a lot of Magicka, the bonus is great, but if I'm more of a fighter, then the inborn ability to resist that Magicka being used against me is great.
I also like the Dark Elf because they can be used as a mage or a sneak, and their no slouches when it comes to fighting. Plus, they're from Morrowind and anything that brings the games together to make it a more cohesive "universe" is cool.
As far as classes, I have never played a predefined class. I tend to look at what is available and then create my own. I think it's more fun to tweak my character exactly the way I want them.

I, too have never gone with any pre-defined class or specific race. In MW, I took Redguard a lot because of the resistance to disease (important with mudcrabs early in the game). This time, in Oblivion, I went with Wood Elf. After that, I just put together signs, primary skills, etc that look like they might do well for the kind of character I have in mind. This time I was kind of going for an Assassin/Thief build (always a good bet on the first pass through a new game, but mostly because I just came out of VTMB, so it was a natural fit with my mind-set at the time).
Rather than ask what would be fun to play, ask yourself what *you* find 'fun'. Then build a character that will do *that* whatever it is. At the end of the day, I think you'll find you are much happier.

I've played Bretons, Dark Elves - for Magica and/or resistances
High Elves - for Magica
Wood Elves - for Stealth
Not yet played Imperial, Nord, Argonian, Khajiit, Redguard. Mainly 'cos I like a decent amount of Magica.
Bretons and Dark Elves are best if you want a Warrior/Mage
High Elves are good for pure Mage types, but you need to get protections for their weaknesses as early as you can.
Wood Elves are great for Ranged/Stealth, but no Magica bonus and no decent extras apart from 75% disease resistance, which is ok but no great shakes.
I've never played a pre-defined class either; there are always things you don't want in their Major Skills, and you don't get to choose which 2 Attributes to take the +5 bonus for, or anything else either.
I'm going to try an Argonian next. Maybe.
Hm. Like Olorin, I think I like Dark Elves best, even though Bretons are, overall, the most versatile and powerful to play.
