How exactly does PC level affect enemies' stats?

It's widely mentioned on these forums that opponents in KOTOR scale to your level. Does anyone know how exactly? Is it only the Hit Points the enemies have, or are things like their defence, attack, and damage affected as well? I seem to get a gut feeling that damage is constant no matter your level (on my first optional planet I get half my HPs knocked off each blow, on my 4th only about 3 per cent)...

I don't know for sure wether this applies to all enemies, but in case of animals like Kath hounds of shyraks (or whatever they were called) you're right. Your character has no trouble killing them at all when he/she's level 20, while when you're at level 7 those animals can be quite difficult to kill. Malak also seemed easier to defeat when I was level 20 instead of level 15, so I guess you're right.

On the other hand, I've never tried playing the entire game at level 6 :)

I thought the opponent's level are always constant? I didn't take much notice in it when I first played the game but I had a gut feeling that the enemy's level remains the same during the whole game.
