I imagine it boils down to whether you're fine with Cheese bombing. When I think about it, it should be more than possible. One thief might need to be a mage/thief to wield the Staff of the Magi to deal with protections (another should wield the Carsomyer.

doesn't UAI remove those requirements?

It does.

fighter/thief type (assassin/thief for me) is also a very potent build as it has the backstab for a beginning attack and Use Any Item as well as a fighter's THAC0 and Whirlwind among other things. Dagger of the Star +5 and Greater Whirlwind works wonders.

Is there any class which would be ideal to play with six? monks maybe? or sorcerors or clerics or...?

well there was that combo that was made by the most crazy scientist in BG2 forums :D

Kenshairyu or smth was his name, damn i don't remember anymore :(

anyways it was smth like, hivemother+monk+kensai+sorcerer and something like that, but you needed to add those things kinda carefull otherwise you just get a load of errors iirc.. it could do it all and with ease, ofc this was not your typical class because you have to and edit program to add all the abilities etc..

6 of those and it wouldn't be even funny :D :D

go for ranger/cleric's, they get melee+healing+druid spells aswell.. so pretty good if you ask me..

So what your saying is, you have two rival guilds embroiled in a power struggle, battling it out on the streets of Alkaltha and the six of you, with no loyalty to either guild, are gonna walk in, carve up the town and leave with all the spoils?!?!........LOVE THE IDEA :D As suggested I would make sure your party has at least some magical capabilities and I would guess that you might want to draw straws on who specialises in each field, eg. a master pickpocket, master trap setter/detector, master lockpick etc. The party dynamics might also consist of a couple of creeps who do most of the dirty work and several strong tanks to deal with the difficult "situations" that might arise due to a trade in stealing other peoples belongings ;) Good Luck with it, please let us know how it goes.
