I'm about to play NWN for the first real time (back when it first came out I hacked a character and slaughtered everyone in town for kicks, then never got around to playing it for real... lol.) I have both expansions, and hope to take one character through all three of them.

Looking into different builds, I want to try either a FTR -> BRD -> RDD, or a MNK -> SRC -> RDD. Obviously the bard/sorc is only there for one level to enable the RDD benefits, and after I get 10 lvls in RDD I will switch back to my initial class. I would like to know the level that one character, trying to do all quests but not following any kind of walkthrough, will be near the end of the game - if it's 30+ then the monk might be a fun option, but if it's much less than that then I won't get to see all of the monks innate advantages so it might just be worth it to go fighter instead.

Posting the levels you can remember being at certain times in the game would be much appreciated, or any other advice you might have for me. Thanks!

In the original campaign there is a level cap of 20. I usually end up somewhere between level 16 and level 18 or 19.

In SOU you will generally finish somewhere around level 11 to 13.

In HOTU the level cap is 40 but you will most likely finish up somewhere around level 25 to 30.

Note that you cannot simply take a character and develop it throughout the 3 parts. You can only start SOU with a level one character. Also, remember that when you start HOTU, you will lose most of your equipment at start up if you have even a modest inventory. You will only get back a few items later in the game. You do get to keep all your gold though.

You can start SOU as a high level character, you just import your character from the Original Campaign. I wouldn't recommend it though as the game will just become pointless as it is ridiculously easy if you start as a high level.

SOU and HOTU are designed to use the same character as HOTU is a sequel to SOU, but in practice there is no reason why you can't use your OC character or a new character instead of your SOU character.

You're right mr_sir. It's been a while since I played NWN. I just started again to try out DOD. I got confused because it's actually pointless to play SOU with an already developed OC character since you won't gain more than a couple of levels throughout the whole campaign. SOU is designed to be started by a level one character. It's also boring as heck to start with a level 18 character that can't be challenged, hardly ever finds a useful item, etc.
