What are your options for a best starting character.

Any meele character would be my advice. Fighter or Paladins make for excellent and easy starting characters. Fighters especially if you take a few Rogue levels.

Mage
What about characters that cast spell? Which spellcaster is the best?

Please use the edit function instead of posting back-to-back within a few minutes.
For spellcasters, well they are all pretty much the same in my experience - although clerics might be more "beginner friendly" due to being able to wear armor and heal themselves.

Really, it all depends on your playing style. For example, I do not do as well with archers, as I hate having to backtrack through an area I just walked into. Since you have to retreat to use your bow to best effect, I hate playing as an all out archer. I don't enjoy Sorcerer's as much, as I like having a good number of skills to use. Since you need a high Charisma for the Sorcerer and a high Intelligence with Wizards, I tend to go Wizard more often than Sorcerer.
If you really want to try a character to start out, I would suggest the cleric as your class. You have fairly good combat capability if you put your attribute points mostly into Strength, Constitution and Wisdom given that you can wear all armor and have the middle BAB progression. As stated above, you can also heal yourself, which can be invaluable at times if you don't want to bring along the one and only cleric NPC or spend all of your cash on potions.

The first chapter is pretty hard if you are new to the game. If you play as a sorceror it will get a lot easier once you get to chapter 2. You'll probably be at about level 9 or 10 by the end of chapter 1 and around level 16 to 18 by the end of the game - there is a level cap at level 20 if you do get that high.

I've just started playing NWN and my first character (the one I'm currently using) is a female Elf and she's a Ranger. So far I've quite enjoyed playing her, although I'm not very far into that game! I understand what Magrus is saying about having to retreat to use the bow effectively, though. I hadn't thought of that beforehand.
Could anyone provide me with some in-depth information about creating another starter character? I have real trouble with the stats and skills, for some reason. I have read my handbook but I'm feeling really new to all this at the moment!
Thanks

If you are new to this, I agree, choosing skills and feats can be quite confusing. If you are a sorcerer or bard, selecting spells can also seem overwhelming.
The guides at Game Faqs tend to be quite good, I suggest you check out their guides on character creation, which are fairly detailed. Though, bear in mind that much of this really boils down to personal preference.
Regarding your ranger and effective bow use, next time you get the chance I'd suggest taking Point Blank Shot, which allows you to fire your bow in close combat without penalty.

Correction, it provides a +1 to hit and damage if you fire your ranged weapon within 30 ft of your target. It does not negate the standard penalties, which includes provoking an attack of opportunity (AOO).

Ah, okay, I was probably getting it confused with combat casting
(I'm playing a 'battle druid' with a heavy focus on spells).
My character, being an elf does also use the bow, however. And, if I'm not casting, I do have to say, I find myself backing up quite a lot to fire, or switching to melee.
One suggestion I have, which also works for a ranger (upon reaching level 6), is to have your animal companion distract enemies while you work with your bow.
