Khelgar Vision Quest ( SPOILERS! )

I'd like to know if Khelgar actually starts levelling up as a monk once you finished his vision quest, because right now, I'm at a point where I can start giving him feats that wouldn't benefit a monk ( weapon focus, criticals, etc ).

No, he will start as a level 1 monk and you can level him up to the party level immediately. So choose what you want, when the time comes, he will start with a clean sheet.
Also there is a slight bug here. The stat points are not deducted from his sheet, so if you make him a monk at lvl 20 (which is quite possible) than he had +10 stat points altogether.

Prestige classes for Kheglar?

And if I do not choose becoming a Monk, can I level him up in a prestige class, e.g. Weapon Master?

I have yet to see the ability to change a companion's class in any way except this particular quest. The options simply do not appear.

I just finished this tonight, when Khelgar was at level 13. Had to go through 13 level-ups in one go. Much to my surprise, he lost none of his weapons, and of all the nice gear I collected for him, only the heavy armor had to go. I picked up Ri's Restoration (not sure I spelled that right) somewhere along the line, which is a really nice 2H war axe with an effect that works very well on enemies nothing else seems to hurt much, and I was sure I would have to give it up. But no, the monk class didn't take it from him. :D
