Your choices affect the story, but in most cases not the everyday habits of the NPCs, if that's what you were asking. There are several big choices you have to make that will affect the entire gameworld, though.

The characted creation and customization is VERY complex. You have 8 basic stats, 20 skills, 12 tech disciplines with 7 levels each and 16 magic colleges with 5 levels each. There is also alignment which determines how the NPCs will react in your presence. So, the short answer would be: a lot.

Yes, most NPCs are active during the day and sleep during the night. Most shops follow that procedure as well, although you'll find several shops throughout the game that don't have a fixed time schedule or work only during the night.
Do NPCs have an idea about you based on what you did in the past (like in Fallout: if someone catches you killing a child, you're treated like a child-killer; if people hear you're a slaver, porn star, boxer they'll have different reactions based upon your past actions)?
Everything you do in Arcanum has its consequences. There are reputations that can be made throughout the game that will make you more or less desirable in certain towns and cities.
How much can you roleplay? Can you live the life, for example, of a farmer, a renegade mage, a criminal, a thief, a gambler, a technician, a shopkeeper and so on? Can you own a house/castle/shop/farm/whatever else?
Yes for all. Otherwise it wouldn't be a role-playing game, would it?
Be it a dark mage, thief, technological maniac, uptight snob, assassin, or anything else for that matter, your game experience will change according to the path you choose. Yes, you can own a mansion and a ship.
Are there more interesting quests than just kill-the-bad-guy and retrieve-lost-item' can you actually affect NPCs and their lives with your actions?
And again, yes. There are numerous different sidequests throughout the game, from buying a deed to an old sliver mine to negotiating an alliance between kingdoms.
