About the fixes below.... What happens when they run a new patch? Will the fixes still work or will you need to reinstall them. Or what if they finally fix the things that the fixes are trying to accomplish. Will it overwrite?
I havent downloaded any of these yet, but I am looking forward to doing so assuming its not to much of a hassle.

First, check to see if the official patch fixes whatever you need. If it does, you're set.

If it doesn't, check the readme for each unofficial patch to see which version of the game and official patch it depends upon. If it requires, say, version 1.3 and the official patch is 1.4, you either run the official patch 1.4 by itself, or you run the official patch 1.3 plus the unofficial fix you want.

Above is correct.

If you did install these and placed them in your override folder, they should still override whatever the new patch fixes I believe. Alternatively, you can just delete these from your folder, then update, simple as that.
