I have the difficulty slider on easy still having probelm geting pass them

What are the vampire champions vulnerable against (idnot have holy water)

Champions are just thougher versions of vampires so what works on vampires should as well here. They should have problems with acid/fire/sonic damage, so if you have such a weapon, it'd help. Silver weapons should be effective too. If you have a holy weapon, that'd be really nice against them, as they're undead. Depending on your Strength, I hope you have a 2 handed weapon with you. Failing to find anything that they're vulnerable too, you can still opt to deal alot of damage on each hit to overcome their damage reduction. Using small weapons like shortswords and rapiers would not do as your maximum potential is small. Try to use weapons with a damage potential up to around 8-12. +5 weapons would be nice too if you're stuck with enduring the fight.

If none of the above are available to you, I hope you have a save game before entering this part of the game, so you can re-equip yourself better; for I can think of nothing else right now.

You should be able to use garlic to 'turn' them, like a free turn undead. I doubt it will hurt them though. You can buy it at alchemical stores. I haven't tried this yet, but it should be one, venerable way to get past them if you can't fight.
