Hey, I know that you recieve the stronghold of your current class if you dual class(ie. fighter>thief=thief stronghold), but what I would like to know is what would happen if I as a fighter did the fighter stronghold quest, was handed the stronghold, and then dualed to thief. Would I lose the fighter stronghold and be able to get the rogue one? Just lose the fighter one and not be able to get the rogue one? Or would the fighter one be marked as my stronghold regardless?

If you've already gotten the fighter stronghold, then it should stay, and you would not get the offer for the thief one.

Although, I believe, you could get the offer for the fighter stronghold as a fighter, leave it waiting while you "think it over", then dual to a thief, complete the quests and get the stronghold and then return to take up the fighter after "thinking about it".
