I don't see Fallout on your list. Go buy the jewel case fallout 1 and 2 and play them right now. Fallout 2 is hands down no comparison the best gaming...NAY, the best experience of my life.
Ok, maybe not. But it is still the best game ive ever played. If you even remotely liked Baldur's Gate, you will like this. Be warned, this is a Mature rated game. If you like that Turn based RPG tactics element, Arcanum is decent too, the closest thing to fallout I've found, but it does require some patching before you play.
Fallout Tactics and Jagged Alliance 2 are both more 'tactics' based than RPG, but a good amount of fun too. If you have emulators or an old Sega Genesis, the Shining Force series was a blast, which I later in life learned was heavily influenced by the Fire Emblem series.
You may not want to play Fallout though - since playing it, every other RPG has been a slight let down and there are armies of rabid fans looking for the next 'clone' to play.

Yes this question does come up a lot, but then again, it's a the thing that draws a lot of people to GB, and some of them do stay(see "rearviewmirror"). And some people have personalized questions, due to people having different PC specs, and needing personalized answers. And when someone brings back a 2 month old post that seems the most relevant to theirs they get yelled at in most forums. So therefore, I'll answer.
It seems like, since you've played The Witcher and Oblivion, that you have a higher end PC. Good for you, I now feel jealousy and contained rage that may someday lead to insanity and a grocery store shootout. (probably not, I'm too confined lol). Meaningless rant aside, you seem to have played most of the great RPG's out there, and must be either older or have very little time for outside life. No insult intended. The point is, you might want to give RPG's a break for a good 6 months to a year, try some different genres. i know that even if you don't like shooters obsessively, "Lost Planet" is incredibly fun, and on a DX10 computer, you are in for a graphical treat, though I reccommend it for a PS3 or at least with a controller first, as the controls are reportedly less innovative on the keyboard, namely the movement/shooting simultaneously ones.
Or you could go back and re-experience games like KotOR and Morrowind. Wait until there are more out there. And take your time with them.

Jade Empire and KOTOR, both are wonderful games.
And you can join into waiting on Dragon Age and Drakensang
