Just to add on to your post Soulo, I checked out Castle Bruma and found in one of the side rooms, in a knocked over basket, is 800 gold, its a very easy, or easy lock. I also just snuck around the main parts where no guards would see me, and there were a few other items mostly some expensive books ...

The only thing I can possibly think of is that maybe you took the wrong horse before leaving the priory? If not I would presume it is a bug. Did this also happen the second time, after you reloaded you saved game?
