Just to make sure. Is familiars level always equal, whether I pick any one? do I have to update them?
Note: I play sorcerer with pixie, but sometimes I feel that hellhound/panther is more suitable in some quests.

Yes, everytime you level, your familiar levels too, that is if you keep the same class. If you would go fighter for a few levels, the familiar will have missed those levels.
Hellhound is pretty good, but pixie has lockpick... Depends on what alignment your playing I guess.

Your Wizard familiar will be of the have as many levels as you have Wizard levels. The same for sorcerer. If you have other classes, they do not add.
As a reference: I don't think Wizard/Sorcerer levels add to determine familiar levels either, so if you go Wizard/Sorcerer you effectively, have two familiars at their own levels (although you would likely have one at any one time). Never bothered to prove this tho.

Henchmen and familiars are two very different type of allies. A henchman is effectively a character with his own right, and gains experience alongside you as you adventure together. Typically, the game allows you train any lower level henchman up to around your level of experience so if you do meet new characters you want in your party, they do not end up being a burden to the group because they are too low level to be effective/efficient. Any henchman in your group takes a portion of experience rewarded, so if you gain 500xp, with one henchman, you actually only gain maybe 250xp.
A familiar on the other hand is a creature tied to your wizard/sorcerer class and, like spells, are part of the class. Therefore, they automatically gain levels when you level up in the respective class. Notice they are always unsummoned when you level up in that particular class, so when do resummon your familiar, its level would have been raised. They do not gain experience individually, so if you do not have a henchman but only a familiar, you gain all rewarded xp.
The special note I made with multiclassing is because then you have a difference between your class level and the character level. As the familiar is tied to your class, there is a slight distinction on what to expect.
