If you've got, say, an unidentified "see invisible creatures" potion (don't remember the exact name) then making that potion will identify the remaining unidentified one. Or yes, drinking it.

Right, but if you don't know what it does, you'd have to run down your entire list of formulae making potions, and after that you still might not have the formula for the unknown potion yet. My way's riskier, but a surefire way to know what you've got (if you should make it again or have multiples).

You also apparently need a certain level, either Character or Intelligence.

There are two unknown potions (White Honey, actually) in the Prologue that didn't get IDed until I got the Scroll that contained it.
