I must be overlooking something obvious in the Equip screen or on the workbench, but how do I go about removing an upgrade from one item, so that I can use it for another?

You should be able to just remove it at the workbench. Select an item to upgrade, and you should be able to add or remove each upgrade on the item.
If nothing we do matters, then all that matters is what we do.

When you're upgrading the item, select "None" in the appropriate slot and then select "Assemble".
