I'm want to make a great character who can go through the game easily, but My first character's "balanced" approch failed. My idea is a 16 str, dex, and con Scout/Sentinal, using double-bladed weapons. Would a Solder/Sent, Scout/Guard or Sold/Guard be better? Should I hold my levels?

Any advice is appriciated.

I like to go for a Scout4/Guardian16. Scout 4 gets you 2 free Implant slots, and 2 free Flurry feats, which is what I use as my attack.
Don't start wielding two weapons (or a double weapon) untill you have at least Improved Two Weapon Fighting. Otherwise the to-hit penalty will be very big.
16 in all three physical stats is a bit of a waste. I'd rather go for something like 14 STR, 10 DEX, 14 CON, 14 INT, 14 WIS, 12 CHA. This nets you an extra skillpoint, so you can keep Persuade and Repair (for a later sidequest) maxed as a Guardian. You get quite some bonus Force Points from WIS & CHA.
Increase STR at every opportunity.

Do you want a balanced build or one that pwns all hands down?

For the first, go Soldier 7/Sentinel 13. Two weapons fighting (obviously), Master power attack, Force Speed, Stasis Field/Insanity and make sure to use dexterity enhancing equipment. If you do, you're defense will be amazing and you are resistant to the majority of Force Powers used against you. Straightforward, easy, simplistic and balanced to say the least.

For the second... well that requires a schematic:

Class: Scoundrel 7/Guardian 13

Stats:

STR: 14
DEX: 15
CON: 10
INT: 8
WIS: 14
CHA: 14

Feats:

Two-Weapon Fighting: 1-2-3
Power Attack: 1-2-3
Implants: 1-2-3
Toughness: 1

Force Powers:

Burst of Speed: 1-2-3
Stun/Fear: 1-2-3
Force Push/Shock: 1-2-3
Energy Resistance: 1-2
Throw Lightsaber: 1
Cure/Drain Life: 1-2
