Well, no vampire will sneak up on you when you are sleeping to bite you, i think. More likely you had the vampire's disease, porphyric hemophilia, when you went to sleep, and had forgotten to get it cured.
In any case, once you have completed the vampire's cure quest, and cured yourself with the quest potion, it will be impossible to become a vampire ever again. Without resorting to the console that is. So you needn't worry 'bout contracting the disease when fighting vamps again.

The quest walkthrough can be found here. I find it odd that she doesn't accept the bloodgrass tho. In any case, if you cannot work around that problem, there are ways to remove vampirism by means of the console. But you need to be playing on the pc to do that.
Also, by doing a search of our forums, you can come up with other ways to solve the vamp cure quest problem, as it has been discussed numerous times. As far as I can see, there are two vampire cure quests. One through Vicente Valtieri of the dark brotherhood, the other through the mages guild. I suppose it depends on how you become infected. Although there is a way around the sun-damage. Feed until the sun-damage effect is gone, and simply do not rest. You only regain the sun-damage if you wait or rest. So if you need to advance a level, rest, then feed again and avoid waiting at all costs.
