Well, i'm starting to amass 3 bags of gems now. and i have no clue what there use is. Are they just gold substutes? I have a few normal rings, i was thinking you could forge a magical ring with the gems but dont know if you can. So what are gems used for?
Most gems are just loot to sell, although there are a few you will need to forge weapons. you can find out which ones in the walkthrough area of this site. If the rings do not have an abilities section in their description then they are just loot also.

Buy you mean steal right.
Gems can be a great way to get more cash. But there is a few to keep one would be the rogue gem.
You might want to hang on to a diamond and a beljuril as well...
