I have some problem when dueling the Handmaiden.
She is somewhat invulnerable in the second fight with melee weapons. She can hurt me but I cant hurt her. Therefore I cannot proceed to make her a Jedi.
Any solutions?

You won't be allowed to take the second fight until you have a sufficient level, so if you're having trouble, it's most likely because you're using a tactic that incurs too many penalties to your attack. Arm your character and keep an eye on the + for your attacks to the far right.
If you're using two-weapons, you might find that the + for attacks goes down for both hands, if you don't have the master two-weapon fighting feat yet. if that's the case it's frequently better to go with just one weapon, because even though you get less attacks, you're still more likely to hit with them.
The same goes for your tactics during combat. If you're trying to use alternate attacks like Power Attack (- to hit, + to damage), Critical Strike (chance of double damage at the cost of less chance to hit), or Flurry (more attacks, but reduced attack) and find you have trouble hitting, use the standard attack (the icon looking like a sword) instead.
The alternate tactics are generally worth it against harder opponents (like in this sparring match) if you have them the feat at master level or at least improved. Also, if you combine two weapons with an advanced attack, it's better to have one at the master level and not use the other than having both at improved level. I always go for both Flurry and Two-Handed Fighting, but I only ever use both once I have both Master Flurry and Master Two-Handed Fighting.
I don't recall if shield are allowed in this fight, but if you're still having trouble, try using one of those Mandalorian Melee shields that protects against bludgeoning, piercing and slashing attacks. But I don't recall if that's allowed, so save your game first.

If you are finding it nigh impossible to defeat her, and becoming frustrated about it, there is always the console to resort to
Then again, I always found the fights with Handmaiden ridiculously easy as I tended to use the hold level tactic on her and other companions capable of becoming jedi.

Well, if you that high-leveled, you really shouldn't be having any problems at all. Obviously Handmaiden has the battle precognition feat (adds her Wis bonus to defense), but even so she still has no armor. You could always fiddle with the cheats and set Handmaiden's constitution, dexterity and wisdom to extremely low levels, and set your strength, dexterity and constitution to the other extreme. That should make the fight easier.

It would, only it doesn't sound to me like it's Handmaiden's abilities that are causing the problem, since even if she does have decent abilities, he should at least be able to hit her if she wears no armor. But try Loki's suggestion anyway. After all, if it fixes the problem, then it doesn't really matter what the problem was.
Also, the characters are always supposed to be a level or two below the exile's level. Well, they always seem to be in my games, at least... Unless I don't level them up, of course.
