I'm playing TQIT and I just realized that Knossos is greyed out on my list, which means I've somehow managed to skip it.
Where do I need to go or who do I need to talk to get it on my map?

Do you mean your quest list or your portal list? Are you in egypt right now?
For quest list you should have gotten 2 sidequests in Knossos from people with exclamations over their heads. The main quest goes through the Minoan Labyrinth and you should have done that and fought the bull/telkine.
For portal list maybe you just forgot to walk up to the portal in Knossos. If so and you are in egypt I would skip it as there is no reason to go back. If your really anal take the portal to Athens go through that dungeon again and fight Alastor again (aka mr freeze) and then take the boat to Knossos on the way out the dungeon.
