I´ve played this game several times and the only part of the game that I know you can gain humanity is by pissing off the vampire Prince of Prague at the time (Rundolf Brandl) with your worry about the safety of kine. When he gives you the permission to attack the Tremere haven, you have to ask him if you can rescue the human slaves as well and if the prince cares not for the ones whose blood sustains kindred.
Maybe you can buy humanity with XP? But other than this, I never found a way of gaining humanity in this game, you can only lose it easily by killing an innocent by mistake (also sleeping through ages). I know that in Bloodlines there are many places that you can gain humanity, but not in Vampire: Masquerade Redemption.
