between spectrecal undead (lich falls under this or another?), Yuan-ti and troll which would be better for a ranger.
I was also thinking of giant later, but i don't remember their being many.

It doesn't really matter.
You can try to remember which battle was so hard that you want it to be easier and choose the monster type accordingly (if you're scared of the Yxonomej battle choose yuanti for example).
But it's not important whether 1 of 6 party members does a little more damage for one percent of the game.
You might as well choose goblins or orcs to have more fun in the prologue.

As kmonster mentions, it is not a big deal in the grand scheme. Have fun.
Personally, my preference is to take it against trolls. They are one consistent foe in every part of IWD1. They are in several locations in the original, plus some are in the Heart of Winter expansion, and in the Trials of the Luremaster expansion.
