I installed MMVIII, with Grayface's patch, but I have no music playing (very annoying), and the intro movie "sticks" at the 3DO logo. I hear all the sounds of the movie, but I only see 3DO.
Any idea what's wrong?

If noone will help you with the issue ; Just play the music with winamp.
As for the intro, it might be cause of codec. I've had the same issue, extending amount of codec's to cover realy old and realy rare formats solved it.

I did recently install MM6 on Windows 7 and had absolutely no problem with installation of the game and applying the Mok's patch. I have not yet attempted MM8 on Windows 7.
It sounds like you need to set MM8 to use MP3 music. From GrayFace's patch, his notes on MP3 are below.
How to use MP3 Music:
Create "Music" folder in the game directory and place there files from "2.mp3" to "16.mp3" corresponding to CD tracks. Set "PlayMP3" to 1. Unlike CD music, MP3 music volume is affected by Sound volume you set in Settings menu, so it's a good idea to keep it at maximum.
P.S. - Does your post mean you've already finished MM6?

I did a brief installation test, and here were my results. Installing MM8 with no patches ended with a game application lock that required use of Task Manager to terminate. Applying Mok's patch for MM8 led to no issues, and I did not have to set any compatibility settings for the game to run and have music audio.
I'd rather be part bull than a complete sheep.
