In your opinion, which of the three is more interesting/fun to play?

Obviously you have more options with the triple-classer but they are not so good in a large party.

I've been playing a dual classed f/m through BG1 / ToSC / BG2 and ToB. I dualed at lvl 16 and after regaining my fighter abilities I often found myself using brute force when I should have casted spells. Big fun anyway.

Playing a f/t must be at least as much fun, I remember Coran from BG1 quite well as my "second" main character. And with all those traps in BG2 there is a lot more potential for that class. Playing a thief is also quite thrilling, you never know if you manage to sneak through the enemy lines or if a trap is really going to blow up a monster like you have planned. You maybe get more attached to your character that way.

I also imagine that a f/m/t is overloaded with options what to do in a given situation or has - simply said - "too many icons to choose from". A f/m/t probably grows into a one man army at high levels and you get less fun out of the NPCs at that point.

So my personal first choice out of the three would be f/t, f/m being second.

Well, I'd go with the F/T if I were you, like
PL said, they're just more fun and you get more interested in them.
Also there is a lack of decent thieves in the game. By ToB all you have is that Idiot Jan as a dedicated, (Multi class) theif. They shouldn't have killed off yoshi.
Plus, as a F/T you can get all the best gear for yourself>!!!

What about a Thief/Mage? I seem to recall that Mislead made every hit count as a backstab until the spell wore off. Assassin 7x backstab, anyone?

Go with the Fighter/Thief (or Assassin/Fighter) and get "Use Any Item".
- Have wizard cast Non-Detection on you (or use the cloak)
- Equip Mislead scroll, use it
- Go bash some enemies, whirlwind if you like
- Repeat...

No need for mage level!! ;) The only restriction is the amount of Mislead scrolls you find.
