When a druid shapeshifts into gww or earth elemental or whatever, do bonuses from things like belt of fire giant strength carry over to the shapeshifted form? or does the new shape have it's just use it's own thac0 and ac regardless of what items you are wearing in human form?

Don't know about the Giant Strength girdles, but the AC bonuses from the rings/cloaks of protection do carry over to your elemental from, as well as the THACO bonus from the Gauntlets of Expertise.
There's nothing a little poison couldn't cure...

Shapechanging generally alters the Stats (Strength, Dexterity, etc) and resistances (Magic, Fire, etc) globally so a strength belt will NOT effect a shape changed creatures strength. - Curdis
