Which character is better to invest in for BG2 as well as NeverWinter nights?

Well, I wouldn't put too much value in Neverwinter Nights, as any character you import (if they still allow it by the time the game is released) will be stripped to level 1 anyways.
But which one to pick?
If you want a challenge, try the Wizard Slayer; especially at low-level, it's quite difficult to play one. Paladin is a bit more on the "safer" side, and if you're a newbie to the game, I advice you to play a Paladin instead.

actually, i've read that they have taken away the feature of importing BG2 chars into NWN, since you can create them there, using the toolset or whatever.
as to your first question, why not have them both! start a multiplayer game, create the first character, whichever you feel more identified with role-playing wise, them the second one, and you still have four NPC's. i almost always play with two-three chars i've created.
