I heard that an Assassin must be of Chaotic Neutral or any Evil alignment, but let's say you have a Lawful Neutral Thief from Bg1 that you import into Bg2. When they give you the option to become a kit, can you pick Assassin?

Yes you can. there are no alignment restrictions on kits i think, beyond the original class restrictions.

The only kits that are restricted to alignment are the Cleric kits.

The one thing I will say is how can a thief be a Lawful? This is from an RP-ing point of view, but a thief that follows Law? Explain that one...

i agree, but at least they don't let you be a lawful good thief, that would just be too far

IIRC, you CAN change your alignment when importing to SoA, so that you can choose any kits.

(I don't remember if it happens reversely or not: you first choose your kit, and then, if there are any problems (like a good assassin or a chaotic kensai), you get the opportunity to change your alignment)
Being an Evil Overlord seems to be a good career choice. It pays well, there are all sorts of perks and you can set your own hours.
