When I originally started playing my current fighter/cleric dual class Jaheira dexterity was 17. When I restart the game her dexterity goes down to 14. What gives? Because your character is of a higher level you get her with lower stats? I mean she doesn't fight all that well to start off with and romancing her is the longest part of the game.
There is an error with her creature file at level 12, I've edit it and sent the new file to the email address you have in your profile - you'll have to restart to fix the problem, or you can just edit it back to 17 with Shadow Keeper.
