Do they stack?

Yes and no, they dont overlap because they resist different things. Damage reduction only resists physical damage done to you by an attack. It won't help you at all against a spell effect, breath weapon, etc. Elemental resistance reduces elemental damage from any source, spell, flaming weapon, breath weapon etc. Since they affect different things you can have both benefits on your character. The only time they would both affect damage from the same source is if you had DR 10/+2 and Fire Resistance 10 and someone hit you with a +1 flaming scimitar if they did 10 physical and 5 fire you would completely ignore both.

Let me rephrase my question.
Do two or more damage resistance modifiers of the same type (i.e. piercing) stack, and do two or more elemental resistance modifiers of the same type (i.e. fire) stack? In other words, would a belt of piercing resistance stack with a ring of piercing resistance? And would a ring of fire elemental resistance stack with boots of fire elemental resistance? (these aren't necessarily actual items)

So if I equip 2 Rings of Elemental Resistance, then I would have 30/- protection against all elemental damage?

By D&D rules no they don't stack. 2 bonuses of the same type never stack, only the largest would have an affect. Thus if you had say a belt of fire resistance 20 and a ring of fire resistance 10 you would have FR 20. I haven't tried it in game yet as Im sure it wont work, but if it does its a large departure from the rules they claim to follow.

All right. Thanks Ares. That means I can throw away that second Ring of Elemental Resistance. I'd assume the same goes for damage resistance, since that's even cheaper than elemental resistance. It would be so nice if they showed this crap on the character sheet...
I don't know about you guys, but I think in NWN (as opposed to BG/BG2):
1) The rules are more compicated
2) The manual is inadequate
3) The in-game feedback is inadequate
It might be just one or a combination of all of these, but I feel that I have many more questions about the basic game mechanics of NWN than I ever did about BG or BG2. That's not really a good thing. Basic game mechanics should be simple enough for a single person to understand after a run through the game. It shouldn't require a team a game freaks to figure it all out (no offense intended ).

Sorry for the erroneus info, I thought all along that they stuck. I guess I'll remove all my items with elemental resistance; I'll use protection of elements and elemental shield instead. Are there any rings out there giving bonuses for charisma? Or amulets?

I may be wrong but doesnt the Lantanese Ring raise CHA in addition to its regeneration? And as for the attribute bonuses stacking, that is so waaaaaaaayy outta line. Thats why in 3rd edition the items that raise stats are cheaper for the lower end items because they dont stack, and to get better items the price increases get exponential. If 8 items of Dex +2 stacked the price difference between them and 1 item of Dex +16 would be astronomical. I love the things in NWN that stay true to 3rd Edition rules but some of the stuff that doesnt is absurd.

That one rule threw monks way the @#$% out of balance. Ignore the fact that in PnP DnD I've never even SEEN something that raises dex or wisdom by 5, the fact that a high level monk can have many of them just makes them overpowered as @#$%.
Add that to the fact that Bioware made uber monk items that you will NEVER FIND in normal DnD freaking commonplace in NWN, and you have one very, very overpowered class.

Yes...Boots of the Sun Soul (AC +5, DEX +3). My fighter/rogue just loves them (thanks once again to Use Magical Device!). And since the AC bonus is a Dodge bonus...
