My current paty kicks a$$ good, but lacks a cleric, Jaheira has to do all the healing:

I found the following a great mix.

My char Cleric (priest of lathander
Minsc
Keldorn
Jaheira
Nalia
Imoen

Both Imoen & Nalia have fab dex and are good with bows. there just happen to be 2 great short bows available too. both make good mages too. you can never have too many Breach spells or Magic missiles.
Jaheira is my 3rd Tank but good healer. Great with amulet of power for Vampires
Minsc is already on 800000xp when you get him so his THACo gets low dead quick.
Keldorn for Carsomyr. Give Gauntlets of DEX & bracer of Strength. Great mage killer too with Great saving throws

(1) Me (Human Undead Hunter)
(2) Minsc
(3) Anomen (Decent Fighter and great Cleric)
(4) Jaheira
(5) Imoen (Best good Mage)
(6) Jan (irreplaceable. The only thief
and a decent Mage

N.B. I dont use Aerie because her HP is too low and with this Party I have a good balace of Priests and Mages

I recently played through the game with an all created party. After going once over with the given NPC's I wanted to try my hand at creating my allies. I ended up with

Monk: Kinda weak early on, but shines later ingame. 93% MR after tears of bhaal, and soloed the last fight with him =). Ended with an incredible ac of -10.

Straight Half-orc Fighter: A berserker might have been a better choice, but grandmastered in 2h swords he did exceptionally well.

Half-Orc Fighter/Thief: 5x Backstab mod, 2 rings of inviz, dual wielding the Crom Fayer and Celestial fury, he has all the thieving skills I could ever want, and except for being a little weak, he deals out damage very quickly in combat

Human Archer: Getting that first shot in has been the deciding factor in many fights. Only problem is he eats arrows like nothing else (Uses long bows, so no gesn for me) His inventory is generally COMPLETELY full of arrows. =)

Dwarven Cleric: Keeps all my melee types buffed and alive. Also raise dead, aerial servant, and an AC so low it hurts ( -12 or 13 I believe)

Gnomish Illusionist: Being the only mage in the party, he got all the toys you could ever dream of. Also, with 19 int his spellbook is utterly crammed (Though I can't find spell trigger =( ) He's probably at his most useful in taking down mage protections so my other chars can hit people.

All in all this party cleaned up through the game. By the end everyone had hit the XP cap =) The sheer number of hits lain down is incredible. 4 from the monk 7/2 from the fighter, 4 from the F/T (5 if I swap out the crom for the belm) and 7/2 from the Archer. 15 attacks per round makes for some very dead monsters =).
