Could be a spell that "encumbers" you..I.E. makes you heavier and therefore overencumbered.

Also, not sure if this can happen but a touch from certain creatures (ie undead) in other games could cause level drops in strength which would also cause you to be able to carry less than an expected amount.

Right, you may have spell Burden put on you (it wears out after some time) or Strength damaged (most often by some Bonewalker, you need something what Restores Strength, spell or potion)

This has been happening to me a lot since I started wearing Ebony armor - I was even concerned that bits of the armor might be cursed or something.

My Endurance and Strength stats go red regularly so I go a Tribunal temple to restore them. Is there a general resoration spell I can learn that restores any stat that's gone red so I don't keep having to go to the temple?

There isn't original Restore All spell, altogether there is a spell for every atribute. One can allways construct the composite spell at spellmakers. However, IMHO, the best is to put them on an item. I usually have two rings (Expensive) each restoring 4 attributes by 30 at once - Restore Body Ring (Strength, Agility, Speed, Endurance) and Restore Spirit (Intellect, Willpower, Personality, Luck). It's quite possible to make a ring restoring all attributes at once. Restoring one attribute by about 30-40 even fits in Common Ring. IMHO it's the preferable way because as more you need it as less you can cast it (usually at the final of fighting episode when Magicka is spent and you're tired; and what if it's your Willpower what's damaged?), and you may get it early in the game when you just haven't already mastered Restoration that much.

A very good idea, I had not thought of this. I carry around restore potions all the time. One ring weighs much less and can be used multiple times.

I suspect this is because your ebony armor has brought you close to your non-encumberance limit. Consequently, it only takes a single spell to make you feel the effects. :)

Whenever wearing ebony armor I enchant my rings or amulet with +str I allways want to keep my max weigth allowance two times as much as the weigth I am actually carying, you will get a penalty for being heavily loaded in your AC so watch out with that, also when you are heavily loaded you can be knocked down REALLY easily

I've never bothered. Typically, I always carry a few potions to compensate for any decrease of stats due to spell or disease. I travel light, which leaves me plenty of room to expand when you find interesting items left behind by bandits, etc. My current character's something of a bruiser with only modest magical skills, though he's excellent at alchemy.
