I don't know if anyone else found this but when my fighter/thief got his thief guild I started the Nalia quest. When I finshed I got the message blah blah blah help me blah blah nevermind. I didn't expect the castle anyway. Then I kicked her out but remembered she had my really fast bow(forgot name). I got her back and she asked me to take the castle and so far it has worked. Don't know if it will work with others.

It will AFAIK work with any figther/<other class> combination, as long as your fighter-class is active.

This is generally common knowledge for most people who informed themselves about these things, read walkthroughs, or played long enough.
Anyway, you can get multiple strongholds with any multi/dual classes (dual if both classes are active), as long as one of them is fighter (or anyother class that would get the keep as stronghold), or mage (specialist mage/sorcerer). The fighter classes have to turn down the first offer of Nalia to get the keep, then aquire the other stronghold, and return to the keep to get it, and she'll offer it to you again.
As for the mage, all you have to do is get the other stronghold first, then do the Planar Sphere quest and just not fulfill the last wish of Lavoc (provided you're a (specialist) mage or a sorcerer).

This all works though, only as long as you haven't got the Multiple Stronghold fix from the [url="http://members.home.net/mrkevvy/"]Baldurash site[/url], which adds the missing dialogue checks for Nalia and Lavoc to prevent the player from obtaining the Keep or the Sphere if they already have a stronghold, as this wasn't intended by the creators of the game. Generally, Baldurash is an excellent site, that you should keep bookmarked ;)
