Well, I seem to have two problems at the keep. First, south of the Golem room are some rooms I can't enter. The only visible door leading there can not be opened as I only get the message that the door will open after it is repaired or so. Are there any secret doors leading there? If so, I probably just missed them so far.
My second problem is the boss troll and his two lackeys. Man, are they tough! I tried like 10 or 20 times to kill ONE of them but nothing seems to work... they kill my main fighters in 2 or 3 hits while I just manage to injure them lightly. Any hints for that fight?

My guess is that you missed another door somewhere else. I didn't repair or open that damaged door at all, yet I got the entire map - I even got the other side of that door (without cheating with the all-map view or anything).
Be sure to carefully check the boundaries that you currently have for visible (and missed) doors. Also, if you're looking for secret doors, get your thief and put him on trap detection. According to the rules, this should detect hidden doors 100% of the time. Just have him walk slowly around the place, close to the boundaries stopping you.
As for the trolls: you did encounter them at the lower level, right? Try luring them one at a time (door openings work miracles here), or shoot a fireball (they take doublee damage - or so it seems - from fire attacks) out of their visual range, but close to where they're standing. Another trick to lure them might be backstabbing, with a thief with boots of speed.
Once a troll is down, use acid or fire attacks to finish him off (but I guess you already knew that ). But the key here is using the door openings. Catch them in the door - they're too big to fit next to each other - and hack away with your party on the single troll standing there; you should be able to hit him with two or three or your party members, while he is on his own. Once he's really dead, another troll will most probably take its place, so try to keep your people in place!

Im not sure about this one, but the broken door could be fixed when u take over the castle, after u finished the quest. Everything else is fixed, so i would guess the door should be in order also. Thats just a feeling though..
As for Torgan:
First, i traped the place between the door and where the troll sees you. then, when he attacks, he is finished. For the other two: first i got my mage to cast web upon them. they couldnt move. To finish them off next, is easy...

The broken door is repaired after the fight is over, but items disappear it seems.
You're missing an illusionary door, I missed it too my first time thru and was running all over the place trying to gain access to the central area of the map. That one illusionary door will lead to the rest of the map.
