I can't kill the vampire Dace at the aylum dungeon because i do not have a stake. So how do i get his hand?

Get a stake, of course

There is a stake to be found in the dungeon (check the walkthrough if needed).

Alternatively, you can CLUA one in - or the hand.

I believe there's a stake on the kobold shaman who were worshipping that one big crystal. (Secret Door next to book that spawns all those different enemies.)

Yep, and one can also be found i the ´library in that same libyrinth...... atleast soemtimes it can... it seems to be on a random cycle

Use Shadow Keeper to edit in the stakes if all else fails. Or Dace's hand for that matter.
