I disagree with your Sarevok choice, my choice would be the guy that played Imhotep from the Mummy returns. That guy is seriously buff, moreso than Dwayne Johnson I would say. He has the right look, and the right build, but I think the voice is wrong.
Come to think of it Triple H would be perfect for the job, but he's a little too top heavy but that doesn't really matter, because he's the only one I know with a fitting voice.
Anyways .... the guy that played Imhotep, could play Minsc, but I'm not too sure on that, because I think to play Minsc, you need some sort of dazed and confused look on you perpetually.
Anomen needs someone pretty diesel to play him. He does have 18/50 str after all. Hmmmm, Bull Buchanan from the WWF would fit the bill, but I doubt he has the intellectual capacity to handle anything more than wrestling.
Jaheira is a tough one because I'm not sure what chick could do a russian accent, and has a stance that comes across as individualist b1znatch, AND look good in corn rows.
Aerie, you need someone SERIOUSLY petite to play this role, because elves are only 4'2 after all.

Yoshimo, I also disagree with, because Chow Yun Fat doesn't really fit the archetype. For Yoshimo, you need someone really friendly and talkative, yet have a slightly greasy demeanor.
Another thought, why not make it a CG movie like Final Fantasy or Shrek, so that solves the look part, and you can put more effort into voice casting (actually why not call back the voice actors they used originally ?)

Another good idea would be Rowan Atkinson (Mr. Bean if someone doesn't know) in the part of Minsc, Whoopie Goldberg as Viconia, Julia Roberts as Jaheira, Kevin Spacey as Cernd, Tom Cruise as Anomen and Ernie Shwarznigga as protagonist (half-orc fighter). And who would be the director you ask. Why of course our all-time favourite John Travolta .
That would certainly make a great crash-and-burn movie. It probably would kick Battlefield Earth's ass too.
