Sometimes, while walking with you party, your NPCs start chatting.
I don't know how you can trigger those dialogues and I'm wondering how many there are.

Yep. A mana pump. Most party dialogs between your companions occur at random, like the ones in BG2. Provided you have the right pair with you when on a quest, and aren't engaged in anything important, there's a chance they'll speak. I suspect there are more than you list, though. I just haven't tried to get 'em all, but someone will--eventually.

And yes, the Shivan Dragon is the source of the Star Wars use. Many times, creators will "pay homage" to something they like by referring to it obliquely. One game named a tavern after the title of a book by Fritz Leiber, who invented the great fantasy team of Fafhrd and the Grey Mouser. Another included a character named after a minor figure in a little known Shakespearean play. A later director included a cane and pair of gloves in one scene that were identical to those used in one of Chaplin's later films.
