I guess if you use him as a close combat fighter, but if you arm him with a bow he is probably the best fighter in the game.

Then it would have to be Carbos, he looks like a human fighter. Shank seems to be a (half)elven thief/bard from the looks of him...
And I really agree with you, to get beaten by these guys you would have to stand absolutely motionless (for a couple of hours...)

A NPC is only useless when you don't know how to take advantage of their strengths and compensate for their weakness. Khalid is for example one of very few NPCs you may give ***** in Bows...

khalid also has a good constitution IIRC, and can get some high health. Minsc or Kivan certainly dont have as much. Khalid also has 16 dexterity which is not bad at all. Also, as has been said, he can have 5!! stars in bows!! IMO he is one of the betters.
AND there are the tomes which you can use, especially if you arent planning to import over to BG2.
There arent any worst or best fighters in this...I think it all depends on your style. For example I find AC and HP more important in BG1 as you are low level and need every HP you can get. You dont really need strength as everything there is can be beaten down eventually with smaller amounts of damage as long as you stay alive. Nothing regenerates so you dont really need to hit for a lot of damage. Therefore strength is not all important.
It is very different in BG2 (especially with TDD installed)
