Well the secret I found to making it easier for me was to try and shoot them all (as fast as i can) at the beginning when they all fly in at once. You're bound to kill at least 2-3 of them!
That's a given, SWG, since they all start near you. But I hate it because it's not roleplaying, because my PC never learned gunnery, and because it's mindless. Those are good enough reasons, for me.

Ha, it's nice to see I'm not alone in my sincere and complete dislike for the pathetic gunnery mini-game
If you can't take it out of the game altogether, if you can't make it optional, if you can't make it a little more sophisticated in terms of controls, then please please please autosave before space travel
Maybe they made the Gunnergame so annoying so that you would rollplay better and don't return to planets you've already visited before just to finsish a smallquest, continue swoopracing, or just to buy/sell some items.
About the other mini-games, i like Pazaak, it's a fun quick game, that can be quite chalanging. I hate swoopracing, i'm just not good at it. And it's needed to finish 1 quest (on tatooine i think) the only quest i didnt finish
Well I don't like this mini-game, too. But you can train, if you have HK-47 in your crew. He can initiate this mini-game for you. (in black-white, however.) And if you trained it a couple of times it isn't that difficult. But I always quick-safe before leaving a planet.
The attacks are random except for taris, the leviathan and the star-forge.
yes its pretty mindless and an annoyance and i cant figure out how that stupid radar waorks everytime i turn towards a reb blip on the radar i'm just staring at empty space
the radar doesn't tell you if it's high or low. Also sometimes the ship will be far away and it will look like a blip on your screen. Altogether i think it is not that great of a mini game

While I also did not much enjoy the space fighter mini-game, I bothers me that people play through a game; and the second they find a part of it they cant beat easily; they start to complain.
I mean really, I sucked at the space-shooter mini-game, but I didnt suddenly start calling it pathetic or wishing it was left out just so I would be able to breeze through things without a challenge.
Bioware made a great game here (BG2 was better though) and if they want to add a shooter mini-game im not going to start insulting them.

A bit off-topic, but BG2 is Baldur's Gate II, which has its own separate forum here on GameBanshee. It's the second major title that Bioware put out. Many people love it as much as KotoR; some even prefer it, though that goes both ways. It's set in a standard medieval fantasy universe, and provides larger party choices, and more interactions among party members--as well as a lot more challenge than KotoR, IMO. There's probably a review of it up on GameBanshee, too, which you might want to check out. And there quite a few mods for the game that add new party members, new items, new quests, etc. I strongly recommend it to people who enjoy KotoR.

So play it, then. I'm terrible at arcade games, and I consider 'em mindless. And as I wrote above, I didn't buy an RPG in order to be forced to play an arcade game.
